Early Snowball: Crisp and tender white curds. Heads grow to 6-7 inches across. 60-85 days.
Di Sicilia Violetto: This Silician variety grows deep purple in the garden but turns green when cooked. It will produce side shoots after the main head is cut, and can get quite large. Excellent flavor. 80 days.
Romanesco: Heirloom from 16th century Italy with beautiful, apple-green whorled spiral heads. Pleasing, nutty flavor best served fresh. 75-100 days to maturity.
